Founded in 1846 Champagne Devaux is the leading producer from the exciting Côte Des Bar region in Champagnes south. The House is owned by leading growers of the Region after the last member of the Devaux family handed control to the group in 1987 with assurances that the growers would strive for the highest standards & continue the legacy of the House.Pinot Noir is King in the Côte Des Bar & hence this variety is prominent in many of the Cuvées and what Devaux refer toas the backbone of the House. The D collection is the principle range & showcases the dedication of the House to long ageing before release with a minimum of 5 years for the NV range & 10 years for the Vintage Cuvée. Chef de Cave Michel Parisot has overseen 25 vintages & has an intimate understanding of the region which has seen Champagne Devaux featured on some of the finest wine lists in the World.
Much of the quality in all DEVAUX Champagnes is in large part thanks to, parcel selection (for the D Collection range), sustainable vineyard management, technical support and follow-up at each key stage of the season, pressing as close to the vineyard as possible. This quality approach applies also in the cellar, where the following principles are observed, ageing of reserve wines (wines from previous harvests) in predominantly oak vats, use of only first press wines (the“cuvée”) in the blend for the Classics and “cœur de cuvée” for the D Collection, extended ageing in the bottle following the“prise de mousse”, aged minimum 3 years for the Classiques, aged minimum 5 years for the D Collection bottles and aged 7 years for the D Collection magnums andlabelling by hand for the Sténopé and D Collection special bottles. Over time, the Côte des Bar Champagne terroir rehas become a very popular wine region that best exemplifies the fruitiest expression of Pinot Noir.
The Côte des Bar is situated in the south of the Champagne appellation (between Bar-sur-Seine and Bar-sur-Aube).This renowned vineyard area represents a quarter of the total Champagne production. The stunning rolling landscape belies soils and unique exposures ideal for Pinot Noir, one of the key Champagne grape varieties.
